Processing of Cashew Apples

A training programme on minimal processing of cashew apples was successfully organized at the ICAR-Directorate of Cashew Research, Puttur, Karnataka, on April 17, 2026.

The programme aimed at imparting both practical and theoretical knowledge to participants on value addition and post-harvest management of this underutilized yet nutritious fruit.

The programme was inaugurated in the presence of the Director of the institute, Dr. J. Dinakara Adiga, Special Guest Yathish Thukaram, Founder of Food Chain Campaign, along with scientists, staff members, and trainees from various regions. In his address, the Director highlighted the importance of cashew apple utilization, emphasizing its immense potential in developing health-oriented and value-added products, thereby enhancing farmers’ income and reducing post-harvest losses. Addressing the gathering on food security, Mr. Thukaram stressed sustainable practices, and drew attention to entrepreneurship opportunities and incubation support as key drivers for value addition and economic growth.

The training programme was designed to provide hands-on experience along with scientific insights into key processing techniques. The major components included preprocessing of cashew apples, juice extraction and clarification, pasteurization of cashew apple juice, and pulp preparation and preservation. Participants were trained in maintaining quality, hygiene, and nutritional value while adopting minimal processing techniques by Dr. Jyoti Nishad, Scientist (Food Technology), ICAR-DCR, Puttur. The sessions also focused on the utilization of cashew apples at the household level and explored pathways for scaling up to commercial ventures. Trainees were introduced to entrepreneurship opportunities, encouraging them to take up small-scale processing initiatives and promote the sustainable utilization of cashew apples and their by-products.

Interactive sessions and practical demonstrations enabled participants to gain confidence in processing methods and better understand the challenges associated with storage and value addition. The trainees actively engaged in discussions, clarified their doubts, and explored innovative approaches to product development. During the valedictory session, participants shared positive feedback, appreciating the comprehensive and practical nature of the training and its relevance to current market demands.
